Product Description

The KRAMER by ZWILLING EUROLINE Carbon Collection is the first line created with Master Blade smith Bob Kramer. With over 18 years of forging experience, Bob has partnered with ZWILLING J.A. Henckels to craft a knife that is an exact replica of the straight carbon steel knives made in his Olympia, Washington workshop. Bob's design has an extremely wide blade to maximize knuckle clearance for larger hands and for cutting through large produce and piles of food. Chopped food can easily be transported with this impressive, broad blade. A material nearly lost to the home kitchen, straight carbon steel requires knowledge and care to maintain. In return, owners will be rewarded with a sharpness and keenness of edge that only straight carbon can deliver. Hand-finished with a 3-step process by the most skilled Japanese artisans, the outstanding blade is paired with a stunning hand shaped Grenadille wood handle with brass rivets and a Bob Kramer mosaic pin.

Blade damaged first time we used it
Last night we used this knife for the first time and cut a piece of broiled meat. We didn’t clean the knife right away, and in about an hour the blade developed the stains you can see in the pictures below. We have a number of high-end knives, yet never had this problem. Will contact the vendor to return it.

    This knife is perfect.
    I purchased this knife nearly four years ago, and didn't review it due to the many negative reviews at the time. I thought that time would tell with this one. And it did.

    I am a professional chef and this knife was my workhorse for many years.
    That said, yes it will rust if it isn't taken care of. This knife is a pain in the butt for a solid month. I hated it when I first bought it. Everything stuck to it, it would rust if it wasn't wiped off between cutting onions and tomatoes, it would rust if it was left damp, it just wanted to rust and FAST.

    Fast forward about a month and the blade is permanently discolored and beautiful at that. Yes, it needed to be oiled after washing, and kept oiled if I wasn't using it for an hour or so, but that help keep it from developing 'bad' rust. Almost as soon as that patina developed, I fell in love with this knife.

    The one high end restaurant I worked in, this was the knife that sat on my board during service EVERY DAY-for three solid years. It will stay crazy sharp, it is durable, and requires basically no maintenance after that patina develops. It will hold that edge too. I would beat this knife up, and it wouldn't chip. 52100 is a super impressive steel. Also, the size of this knife. Some people hate it. I have big hands so this knife feels like a dream. When held properly it is super comfortable.

    So, this knife is great. I beat it up, it's been through a lot with me, and I'll never get rid of it. It takes some patience and serious maintenance at first, but like making a good Demi, good things take some time to get there. You're going to love this knife.

    Just a lot of things to love here.

    First, the ergonomics of this knife are peerless. It fits comfortably in your hand, and the blade is deep enough that even with big hands you'll have no trouble with a pinch grip. The wide, round handle never chafes. You could cut with this thing for hours - I have never had a more comfortable chef's knife.

    Second, the blade holds an edge forever; feels like 2-3x longer than stainless steel knives. I cook a lot - I had to put a stone to my Wusthof about once every 3 months. This is 6 months going and I haven't had to touch it. It's also just sharper, which you can really feel on hard vegetables like sweet potatoes/turnips/carrots, where cuts through extremely smoothly.

    All that said - it's carbon steel, so it's a bit of a diva. You'll need to wipe down the blade after using it and don't put it away dirty. Absolutely worth it though - I use this knife for basically everything and have not been disappointed.

    Edit - 1.3 year update: This knife is still my favorite thing in my kitchen. It is as sharp now as the day I got it. Couldn't recommend it higher.

    First things first, what is important to you? 1) An extremely sharp blade that is easy to sharpen, 2) A knife that takes minimal maintenance and will look shiny and brand new for years. If you are looking for 2), do NOT buy this knife, you'll be much happier with pretty much anything else. If 1) is what you are looking for, read on.

    The carbon steel of this will oxidize and develop a patina very soon after you start using it. Let's be clear about oxidize/patina vs rust. If you wash and dry the knife after using it, it will develop a patina. That is, it won't be shiny, and it will have a sort of dull look to it. This is a stable surface, and it won't wipe off on a dish towel. I don't know if you can get the knife to rust or not. Maybe if you leave the knife in a wet sink overnight it will develop the sort of rust spots that rub off on a dish towel. If this is how you treat your knives, do yourself a favor and buy something else.

    The knife has a nice heft, is well balanced, comfortable, extremely sharp, and very easy to sharpen. I've used Henckels 4 star knives for decades, and no amount of sharpening, honing, or stropping will get them as sharp as the Kramer knives.

    The first impression of this knife if amazing....from a distance and out of the hand. The shape and love of it is stunning as you would expect from a Kramer knife. Kramer demands a very high quality of fit and finish on all his knifes. This is where the problems with this Ziwilling produced Kramer it fails on what should be an excellent fit and finish. As Soon as you pick the knife up out of the box and hold it it feels at home in your hand but then I noticed how badly the handle scales have shrunk and pulled away from the Tang and rivets. The blade is super sharp but the grind is uneven and the is a high tail and a dip in the belly that doesn't even touch the cutting board. in my opinion for $300 this knife should be perfect out of the box. I will be returning shortly.

    I read about issues with the handle and hoped that I wouldn't get a bad one, unfortunately I did.

    The tang and rivets were sticking out from the handle badly and made the knife hard to use. I tried to soldier through as it cut extremely well, and the weight was perfect. Within 30 minutes I knew I wouldn't be able to get past the feel of the tang and rivets sticking out so I returned the knife.

    If you are buying one of these, you are gambling on the quality control. I hope you get a good one!
