Packed with creamy, coconutty goodness and bursting with antioxidants, these parfaits are like tropical sunshine in a jar. They feature two tasty layers – one banana-licious and one bursting with acai and blackberries.
Vegan Acai Chia Seed Pudding Parfaits

Banana layer
- 1 banana (peeled and mashed)
- 1 tsp. sweetener of choice
- 1 tsp. vanilla extract
- 1-1/2 cups coconut milk
- 1/3 cup Navitas Organics Chia Seeds
Blackberry layer
- 1 cup blackberries
- 1-1/2 cups coconut milk
- 1/3 cup Navitas Organics Chia Seeds
- 1 tsp. vanilla extract
- Pinch sea salt
- 1 tsp. Navitas Organics Acai Powder
Optional toppings
- Blackberries
- Banana slices
- Coconut flakes
- In mixing bowl, combine all ingredients for blackberry layer. Using back of fork, mash blackberries and mix everything together. Cover and refrigerate 4 hours to overnight. (Note: The mixture will be runny until the chia seeds absorb liquid to create a gel.)
- In mixing bowl, combine banana layer ingredients, mashing banana and mixing together well. Cover and refrigerate alongside berry mixture.
- In 4 mason jars or in bowls with lids, evenly divide blackberry mixture in a layer followed by the banana mixture. Top with optional toppings of choice and enjoy.
- To store, seal jars with lids and refrigerate up to 3 days.
