This blueberry soup from Ekstroms is easily prepared with water and makes 4 servings (1 cup each). Ekstroms blabarssoppa has been made world famous thanks to the ski race Vasaloppet, where it is always served warm to the skiers. The Swedish word for bilberry, blabar, literally means "blueberry" but the beverage is not made from the North American blueberry (section Cyanococcus of the genus Vaccinium) but from the bilberry, Vaccinium myrtillus, which grows in the wild throughout Scandinavia and other parts of Europe.
